Vasilopita

Ringing in 2020 with Vasilopita on January 6th... better late than never! Athina got the coin for the first time ever! Not bad given it was her first-ever slice of Vasilopita ☺️☺️☺️ Wishing all of you health above all in 2020 and beyond, and of course happiness and delicious eats, too! When we are moved in to our new house next month and I’m back in a fully stocked and functioning kitchen, I look forward to sharing much more with you this year!

#RECIPE:
375g (1 2/3 c) Greek yogurt
150ml (2/3 c) olive oil
200g (1 c) sugar
3 eggs
1 tbsp orange or tangerine zest
310g (2 1/2 c) all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Combine yogurt, oil, sugar, eggs, and zest. Beat well. Sift in dry ingredients. Fold in till just combined. Pour into greased 9 inch / 23cm springform cake pan. Bake at 350 F / 180 C for 45-60 min.
