Creamy chicken phyllo pie, aka Kotopita me besamel. There’s no better way to use a supermarket rotisserie chicken! (You can roast or poach your own chicken, too.) So impressive, yet so much easier to make than it looks. Put this on your list of recipes to try in the new year, it won’t disappoint!
Caramelized Onion + Feta Pie, aka Kremmidopita. A super easy yogurt and olive oil phyllo encases caramelized onions, feta, and cheese. See my story highlights for how to make the pie - including how to roll the phyllo.
Fakes in way under an hour? Oh yes! Fah-kehs, Greek lentil soup, is a natural for the Instant Pot. Or any pressure cooker, of course. Enjoy this healthy recipe tonight and freeze the leftovers or enjoy for lunch the next day!
Wasn’t planning on sharing this but it’s so good I can’t not! A simple cake, perfect for snacking or breakfast, with lots of mango and super moist thanks to olive oil and Greek yogurt. If you have mangoes that aren’t that great or have gone too ripe (like mine!), this is a perfect solution. Enjoy your Sunday, everyone!
Happy Greek Independence Day! Today marks 200 years since Greeks fought for independence from Ottoman rule. I wanted to mark the occasion with something fun and celebratory!
Are you starting to feel summer yet? ☀️⛱💛 Something about the weather this fine weekend feels like summer! Made this summery pasta salad to match the mood 😎
