This salad makes a great lunch or side dish. I think it’s even special enough for Thanksgiving, but easy enough for anytime! The sweet roasted carrots go soooo well with tangy, salty feta.
Black-eyed pea salad, or Mavromatika salata, is a classic. The dried beans are quick to cook, but I actually often use a bag of frozen black-eyed peas.
Zucchini, pea, shrimp and feta fettuccine with fresh mint and dill. This was something I made out of scraps lying in the fridge and it turned out to be so good. Love when that happens!
Purslane and cucumber salad - a delicious use of that pesky purslane from your garden! Purslane is the top plant source of omega 3s and delicious to boot. Not sure why it hasn't earned "superfood" status yet!
